I needed the perfect vegan gravy to top my Vegan Holiday Stuff and this recipe did the trick! This gravy is so rich and flavorful that no one will even know it contains no animal products unless they ask for the recipe (which they might!). If you have vegan or vegetarian guests at your holiday dinner table, I recommend making this vegan mushroom onion gravy and vegan holiday stuffing and serving this for everyone to share. It will be loved by all.

Vegan Mushroom Onion Gravy

Ingredients
  1. 2.5 C. vegetable stock, divided
  2. 1 C. yellow onion, chopped
  3. 1 C. mushrooms, sliced
  4. 4 cloves garlic, minced
  5. 2 T. vegan butter like Earth Balance
  6. 2 t. dried thyme
  7. 1 t. rosemary
  8. Pepper to taste
  9. 2 T. Bragg liquid aminos (or soy sauce)
  10. 2 T. Bragg nutritional yeast
  11. 2 T. cornstarch
Instructions
  1. In a medium saucepan over medium-high heat, saute onion and garlic in vegan butter
  2. Cook until translucent, about 4 minutes
  3. Add about 1/2 C. of broth to the bottom if butter dries up to prevent from browning the onions
  4. Add mushrooms and cook about 10 more minutes, adding some more broth if needed
  5. Add thyme and rosemary and cook another minute
  6. Add the rest of the broth and bring to a simmer
  7. In the meantime, in a small bowl stir together the liquid aminos, nutritional yeast and cornstarch until a smooth paste forms
  8. Once the broth is simmering, add the paste and whisk into the liquid until smooth
  9. Bring the gravy to a boil and cook for one minute while stirring constantly
  10. Add pepper to taste and serve hot
