Ever have a craving for meatloaf? It can’t be just me…can it? Well I’ll pretend like that’s normal and tell you that I wanted meatloaf, but something that wasn’t totally heavy and greasy. Something I wouldn’t feel totally guilty about eating. So, I thought, why not use quinoa as a filler instead of breadcrumbs. And while I’m at it, how about lean ground turkey instead of ground beef? And a delicious little turkey quinoa meatloaf was born. I served it on top of a bed of mushroom risotto from TJ’s (a go to if I only have the energy and patience to make one dish). Delicious!

Turkey Quinoa Meatloaf

Hearty meatloaf made with quinoa and lean ground turkey

Ingredients
  1. 1 lb lean ground turkey
  2. 1.5 cups cooked quinoa (1/2 cup dry)
  3. 3/4 cup bbq sauce, plus 1/4 cup for glazing
  4. 1 egg, lightly beaten
Instructions
  1. Preheat oven to 350
  2. Prepare your quinoa and let it cool
  3. Mix all 4 ingredients together in a mixing bowl until combined
  4. Form the mixture into a loaf and put into a greased loaf pan
  5. Brush some more barbecue sauce on top
  6. Bake for 50-60 minutes, or until cooked through
