Flank steak! I love flank steak. IMHO it’s the most underrated steak of them all. I find it’s the easiest to cook if I’m in a hurry. No mess to clean, no opening windows in the dead of winter because my smoke alarm is going off, no letting the steak rest for 20 minutes at a time when all I want to do is eat it. With flank steak, I cook it low and slow and let it go. This recipe is my absolute favorite. I was inspired by a recipe I found online and I panicked when I saw the link wasn’t valid anymore! So, I’m putting what I can remember (and what worked out for me) on my website so that I never have a panic attack over flank steak again. Brown sugar flank steak is so easy, but is melt in your mouth goodness when it’s all done. I serve it on the side of a veggie of your choice: mashed potato, cauliflower puree, a simple salad, you name it. Today I threw some sliced purple sweet potatoes in with the steak and it turned out great. Do whatever you want. It’s really versatile. When there are leftovers, which is rare, I’ll put them on a nice french roll for a steak sandwich the next day. Hope you enjoy!

Ingredients
  1. 1 flank steak
  2. 1/2 C. soy sauce
  3. 1/4 C. brown sugar
  4. 3 cloves minced garlic
  5. 1/3 C. olive oil
  6. Salt and pepper to taste
Instructions
  1. Whisk all ingredients (except the steak, obviously :)) together in a bowl.
  2. Place flank steak in a plastic resealable bag and cover cover with brown sugar mixture.
  3. Marinate between 1 and 8 hours.
  4. Pour contents of the bag into your slow cooker
  5. Cook on low for 8 hours.
Notes
  1. If you are short on time and don't have time to marinate, even if your flank steak is frozen, put all ingredients together in the slow cooker and cook on low for 9-10 hours. It will turn out just as good.
