Fall is almost here! All soup lovers rejoice! Fall is in 2 days, but I couldn’t wait a day longer to start cooking chili. The weather has already decreased in temperature to a brisk 85 degrees in the afternoon after all 🙂 I’m not a huge pumpkin fan. I don’t go crazy over pumpkin spice this or that, but I do like a nice savory pumpkin every once in awhile. Since I’m in the fall mood, I decided to incorporate it into a chili for a festive, hearty, but also healthy lunch today. This particular chili is full of colorful pumpkin and protein packed lean ground turkey and beans. Top with some cheese or sour cream…or both!

Pumpkin Turkey Chili

Ingredients
  1. 1 lb lean ground turkey
  2. 1 small onion, diced
  3. 1 clove of garlic, minced
  4. 1 can pumpkin puree (14.5 oz)
  5. 1 can corn, drained (14.5 oz)
  6. 1 can black beans, drained (14.5 oz)
  7. 1 can diced tomatoes (14.5 oz)
  8. 1 C. chicken broth
  9. 2 T. chili seasoning
Instructions
  1. Brown the ground turkey with the diced onion and garlic in a dutch oven or pot, then drain.
  2. Add pumpkin, corn, beans, tomatoes, seasoning, and broth.
  3. Bring to a boil, then cover
  4. Reduce heat and simmer for 20 minutes
Notes
  1. Top with shredded cheese, sour cream, cilantro, or whatever you want!
  2. To make this in a slow cooker, add all ingredients and cook on high for 3-4 hours, or low for 6-8 hours.
