Can you imagine keeping a plant-based diet, being allergic to gluten, having a mild allergy to nuts, AND having a sweet tooth? Eek. Well my friend who came over last night is in this predicament. Fortunately for her, I like to experiment. I settled on making these delightful cookie dough balls that will please the sweetest of teeth. They are gluten free, nut free (be sure you are not allergic to coconut as it’s considered a fruit but also a tree nut), and vegan. And they are pretty darn easy to make too. The best part is – no oven required! Just get all of your ingredients ready to dump into a pan or mixing bowl. These beautiful balls will take all of 15 minutes to make. Then, just pop them in the fridge to set and enjoy! This recipe makes about 12-14 balls. Double or triple the recipe if you are taking these for a larger gathering.

Ingredients
  1. 2 T. solid coconut oil
  2. 2 T. coconut milk or coconut cream
  3. 1/4 C. brown sugar
  4. 1 T. vanilla extract
  5. 1/4 t. salt
  6. 1.5 C. gluten free oat flour (I used Bob's Red Mill brand)
  7. 1/4 C. sugar
  8. 1/3 C. Dairy Free chocolate chips (I used Enjoy Life brand)
  9. 1/3 C. unsweetened coconut flakes (optional)
Instructions
  1. Put coconut oil in a microwave safe mixing bowl and melt.
  2. Whisk in the coconut milk, brown sugar, and vanilla until smooth.
  3. In a separate bowl, combine the sugar, flour, and salt.
  4. Mix the dry ingredients into the wet ingredients and stir until combined and a soft dough forms.
  5. Fold in the chocolate chips and coconut.
  6. Roll the dough into balls (about 1 T. each) and place on a parchment paper lined baking sheet.
  7. Place in the refrigerator or freezer until dough sets up.
  8. Remove from parchment and place on a serving plate.
  9. Enjoy!
