This salad is soooo yummy and so simple! I just threw it together the other night with ingredients I already had on-hand and it turned out great. It has crunchy, sweet apples, savory pecans, creamy goat cheese, and tart dried cranberries, on a bed of cool, crunchy lettuce. I topped mine with honey mustard dressing, but there is a maple dressing that I’ll share that I bet would be awesome on it too.

Eat this salad on it’s own, or top it with protein of your choice to make it your meal. Or, serve with soup and a dinner roll! I’m going to make some butternut squash soup and this salad tomorrow and take it over to my sister-in-law’s house for dinner. I can’t wait!

Fall Harvest Salad

Serves: 2-4

Ingredients:

1 head of lettuce (any kind you like; I used romaine and butter lettuce)

1 apple

1 T. lemon juice

1/2 cup dried cranberries

1/2 cup pecan halves

1/2 cup crumbled goat cheese

Pepper to taste

Preparation:

Chop or tear rinsed and dried lettuce into bite sized pieces and put into a salad serving bowl. Fill a small mixing bowl 1/2 full with water and mix 1 T. lemon juice into it. Chop apple into bite sized pieces and put into lemon water and let it sit while you prep the other ingredients. This will keep your apple from browning. Top lettuce with dried cranberries, then add the pecans to the salad. Drain your apples and then top the salad with apples. Add goat cheese (you can leave this out if you don’t do dairy). Finally, top it off with some fresh cracked pepper. Eat plain or with a dressing of your choice (2 options below).

Easy Honey Mustard Dressing:

1/4 cup dijon mustard

1/4 cup honey

1/4 cup apple cider vinegar

1/3 cup olive oil

Salt and Pepper to taste

Put all ingredients into a shaker and shake until thoroughly mixed, or (even better) use an immersion blender until it’s a uniform consistency. If you have neither of these tools, you can whisk in a mixing bowl until blended.

Easy Maple Balsamic Vinaigrette:

1/2 cup maple syrup

1/2 cup olive oil

1/2 cup balsamic vinegar

Salt and pepper to taste
