I wanted a one pot meal that I could throw into the slow cooker yesterday. I am busy working and packing up our house for our move and the hubby had basketball last night, so something easy that involved protein and vegetables was the goal. One of my favorite dishes is chicken cordon bleu. It is definitely an indulgence, but if you are easy on the cheese and don’t bread and fry the chicken it’s a little better for you, right? I must say this was a super easy dish. I put it together in about 5 minutes and it came out perfectly. The chicken was juicy and tender, the ham and cheese melted perfectly on top. I surrounded the chicken with a green bean casserole. One pot! So easy. I will definitely make it again!

Crockpot Chicken Cordon Bleu with Green Beans

Ingredients
  1. 2-4 boneless skinless chicken breasts
  2. 4 slices swiss cheese
  3. 4 slices quality deli ham
  4. 1 bag frozen cut green beans
  5. 1 can cream of celery soup
  6. 1 cup sour cream
  7. Salt and pepper to taste
Instructions
  1. Spray slow cooker with cooking spray
  2. In a large bowl mix sour cream and soup until combined
  3. Season with salt and pepper and stir until combined
  4. Stir in frozen green beans
  5. Place green bean mixture on the bottom of the crockpot
  6. Place chicken breasts on top of the green beans
  7. Scrape any remaining soup/sour cream mixture from the mixing bowl and coat the top of the chicken
  8. Place ham on top of the chicken
  9. Place swiss cheese over everything
  10. Cook on low for 6 hours
