I’ve been super into quinoa lately. Thanks, Costco! I had a huge bag of quinoa staring at me each time I opened the cupboard, so finally I gave in to that small tinge of guilt and shame. I originally purchased it because quinoa is good for me and then a month went by and I still hadn’t used it. So, I have made a concerted effort to include it into meals this fall. This BBQ Chicken Quinoa Casserole was my first attempt at incorporating quinoa into dinners this fall and I must say, it was fabulous! I just used quinoa and a few other staples that I always have in my pantry (corn, beans, chicken, and bbq sauce), and made an awesome, filling dinner. Hope you’ll find this as tasty as I did. Enjoy!

BBQ Chicken Quinoa Casserole

A casserole incorporating hearty quinoa and a few other pantry staples. Great for a quick family dinner.

Ingredients
  1. 1 cup quinoa (dry)
  2. 2 cups chicken broth
  3. 2 chicken breasts, cooked and diced or shredded
  4. 1/2 bottle of bbq sauce
  5. 1 can corn, drained
  6. 1 can black beans, drained
  7. 1/2 cup of shredded cheddar cheese
  8. Diced red onion and cilantro for garnish (optional)
Instructions
  1. Preheat oven to 350 degrees
  2. Prepare quinoa: bring 1 cup dry quinoa and 2 cups chicken broth to a boil. Cover and reduce heat; simmer for 15 minutes, and set aside
  3. In a mixing bowl, combine cooked chicken, beans, and corn
  4. Add cooked quinoa to the mixture and stir
  5. Put this mixture into a casserole dish sprayed with cooking spray
  6. Top with 1/2 a bottle of bbq sauce
  7. Top with cheese
  8. Bake for about 25 minutes until bubbly
  9. Top with garnishes (optional)
